Deported deep into Soviet Russia, she emerged from captivity thanks to an amnesty and reached the Middle East with the Anders Army. Between 1947 and 1948, she studied at the Academy of Fine Arts (ALBA) in Beirut in the painting department, and took part in exhibitions of Polish students organised in Lebanon, but her works from this period are unknown. Her name appears among students visiting the Polish School of Painting and Drawing run by Boleslaw Baake in Beirut.

In 1949, she emigrated to Canada and settled in Toronto. In 1951, the artist showed her work in an exhibition at the Newman Club at the University of Toronto. In 1954, she participated in an exhibition at the Polish Students' Club in Toronto. In 1956, there was a group exhibition of Roman Schneider's ceramics, paintings by Eugeniusz Chruścicki and Mary Schneider, and sculptures by Genowefa Staroń at the Cultural and Art Club. In the same year, Mary Schneider prepared a presentation of Polish art at the King Edward Hotel, in which Staroń participated. The artist took part in an exhibition of Polish visual artists, organised by the KPK Toronto in 1957.

Between 1956 and 1960, Staroniowa studied sculpture at the Ontario College of Art and graduated with a master's degree and a medal of recognition from the Governor General of Canada. After graduation, with Croatian artist Augustin Filipovic, with funding from the Canada Council for the Arts, Staroniowa opened a studio to continue her artistic pursuits. The two-year class was crowned by the 5 Sculptors Exhibit at the Central Public Library: 'Staroń's works stood out for their originality and interesting approach, arousing the interest of the public' ('Związkowiec', 1962).

The Polish Club in Toronto, in 1962, hosted an exhibition: Joseph Czapski and Genny Staron, where the artist's sculptures were accompanied by works by Czapski imported from Paris. The St Andrews Towers residential complex commissioned the artist to create a welded steel sculpture for the building's fountain. In 1964, the artist exhibited her work at the Royal Canadian Academy of Arts and the Ontario Society of Artists. In 1965, she participated in a group exhibition of visual artists prepared for the Polish Cultural Festival in Toronto.

From 1967 to 1973, Staroń taught sculpture in schools and gave private courses. In 1976, she participated in an exhibition of Polish artists at the Ontario Science Centre. Staroń designed occasional posters and catalogues, including designing the poster and catalogue for the exhibition Polonia 78 - Polonia of Tomorrow, in which she also participated. In 1981, she prepared an auction of works by various artists, and the money collected was donated for food and medicine for Poland.

In 1983, she made a tapestry on the occasion of the 25th anniversary of the Marie Curie-Skłodowska Association, and in 1984 her tapestry entitled "Prayer of the Earth" was presented to Pope John Paul II. The artist was socially active in the Society of Friends of Scouting. She co-founded the Polish-Canadian Music Society and was its president from 1988 to 1990, and was a member of the Sculptors Society of Canada.

The artist was honoured twice, in 1986 and 1992, by the Department of Canadian Heritage for spreading the knowledge of art among Canadians. Her work is held in many private collections in England, France, Canada and Poland.
